Ice creams, just by looking at them your mouth starts watering. No matter the weather, ice creams always taste 'the best'. The Avalanche research team has taken a stride to make the ice cream taste even more delicious just by changing its structure. The former studies by some scientists revealed that ice cream is as 'addictive as drugs'. Therefore, ice cream becomes a major item to be researched upon, and who better to research and make it yummier than the "Institute for Snow and Avalanche Research in Davos, Switzerland".
According to the research team, the structure of ice cream changes when it is stored in a domestic freezer. X-Rays have been used to reveal the formation of ice cream structure which changes at different temperatures also changing its taste. Nestle, worlds leading ice cream manufacturing company has expected to reveal the literal state at which the ice cream crystals merge and glow, expecting to change the tas te.
To carry out this study, the Avalanche Research team uses X-ray tomography machine which is one of the few machines that can image tiny structures at sub-zero temperatures. Dr Dubois, a food scientist at Nestle said that when the ice cream is produced it tastes better, than, when it is sold, transported and stored again. It all happens due to the variations in temperature, a white frost of ice crystals outline ice cream and changes the taste.
The study exposed some time-lapse images of the ice crystals which were taken on a variety of temperatures. It showed that when the water was iced up it changed the structure of ice cream and made the ice cream masticates. In short, the ice cream does not bear the same delicious taste, it is harder to bite, and is less satisfying.
Dr Dubois said that, they already know the factors which make ice cream crystals change the structure, but if they could recognize the exact method they would do something to slow the pro cess down.
The research by "Institute for Snow and Avalanche Research" has paved way for tastier ice cream. It is expected that the ice cream manufacturers adopt the study and process for making the item awesomely delicious. Rather preserve the taste, as of when the ice cream is manufactured.
